I don’t know about you, but both of my grandmothers used to make a version of this biscuit. I added the cheese, of course, but the taste of the dough really takes me back to sitting in my grandmas’ kitchens and salivating while the dinner soda biscuits were carefully and lovingly mixed and baked. When I was old enough, they would pull a dining chair to the counter and let me help roll and cut them out. I think interactions like this is what made me develop a love of all things kitchen related. It’s a space of safety and love for me, and not much makes me happier than filling people’s lives with food and conversation – all from learning how to make soda biscuits when I was a little girl.
I remember stealing bits off some of the biscuits, because the dough is salty, and that’s one of my favorite flavors. In this recipe, the cheese really balances the soda out, and makes these the perfect soda biscuit for biscuits and gravy. Wasn’t biscuits and gravy a treat? One grandma used chipped beef in her gravy, and the other used sausage. I’m going to hunt for chipped beef next time I’m in the store, because now I need to make these biscuits and some white gravy.
For the Cheddar Bay version, I decided to stray from the norm and actually use Old Bay seasoning in my version. Sure, the ones at Red Lobster are to-die-for, but if I’m being honest – calling something Cheddar Bay that doesn’t have Old Bay seasoning in it doesn’t make any sense.
I started with the usual ingredients: flour, milk, baking soda, salt, sugar, and cheese. Instead of my normal garlic powder, I used Old Bay seasoning.
Originally, I had to roll these biscuits out, but they really don’t work that way when we get down to it. So you really just need to mix everything together and drop them by the dollops on the baking sheet.
I do love these as the topping to any savory cobbler you might make, as well as using them for biscuits and gravy. They’re also wonderful to involve kids in, because they’re easy, there’s nothing sharp, and they cook quickly.
What are your memories in the kitchen growing up?
