Making cake mix cookies is the fastest way I know to make cookies at home (besides my awesome 4-Ingredient Peanut Butter Cookies, or buying premixed dough). The biggest benefit to cake mix cookies is not necessarily that they are faster than scratch cookies, but that the variety is incredible. Any cake mix you can find, you can make cookies out of with this recipe.
This is perfect for the parent who wants to make cookies for the bake sale or a birthday, and doesn’t have time to bake them from scratch, doesn’t want to use store dough, and doesn’t want to just buy them from the store – all of which are great options for busy parents, really.
I usually start with my favorite cake mix (red velvet), but this time I bought one of those Halloween-themed cake mixes and frosting, because I am feeling a bit festive.
Pillsbury Funfetti Cake Mix for cookies
All you need to finish creating the recipe is 2 eggs, 1/2 cup canola oil, plus a mixing bowl, whisk, spatula, cookie sheet, and of course an oven.
Cookie ingredients: your favorite cake mix, 2 large eggs, and 1/2 cup canola oil.
After you gather all of your ingredients, add the eggs and oil to the batter, and mix it until it’s just wet. It’s very important that you don’t over-mix the batter.
Then, scoop the batter by the tablespoon and drop it on the cookie sheet, with about 2 inches between each dollop. Yes this is a 1/8 cup. I use this measurement most frequently for cookies, so they’re uniformly sized. For this recipe, I use this measuring cup, and then I cut them in half.
Use a 1/8 cup or 1 tablespoon to scoop the batter and drop it on the cookie sheet.
Bake the cookies at 350°F (175°C) for 10-13 minutes, or until the edges are golden brown.
Bake at 350°F until golden brown, about 12 minutes.
Let them cool on the pan for 2-3 minutes before moving them to a cooling rack. WHen they’re cool to the touch, I like to frost the cookies with the frosting and make sandwich cookies.
If you’re feeling it, and some of your frosting squishes out the edge, you can roll the edges in the candy confetti that comes with the frosting.

- Mixing Bowl
- Rubber Spatula
- Cookie Sheet
- 1 Box Cake Mix
- 2 Eggs
- 1/2 cup Canola Oil
- Heat oven to 350°F (176°C)
- Mix all ingredients together
- Drop by the tablespoon-full onto an ungreased cookie sheet
- Bake for 10-13 minutes, or until golden brown
